The heart of each cuisine
Indian food is a universe of regional kitchens: rich, slow-built gravies like butter chicken and korma in the north; dosas and coconut in the south; tandoori breads and kebabs from clay ovens. Spices are layered - cumin, coriander, garam masala, cardamom - and dairy (ghee, cream, paneer, yogurt) plays a starring role.
Nepali food is lighter and more restrained. The everyday meal is dal bhat - lentils, rice, seasonal vegetables and pickles - seasoned with fresh ginger, garlic and a signature spice called timur (Sichuan-style pepper). Fermented and pickled flavours (achar) matter more than cream.
Momos: the shared obsession
The dish the two cuisines argue about most lovingly is the momo - the Himalayan dumpling that Nepal made famous and that India adopted with open arms. Steamed or fried, filled with spiced chicken or vegetables, served with a fiery tomato chutney. If you’ve never tried one, start there.

- Heat: Indian dishes range from mild and creamy to fiery; Nepali food tends to sit in the warm middle, with heat from fresh chilies and achar.

- Bread vs rice: North India loves naan, roti and paratha from the tandoor; Nepal is rice country first.
